TOP Winery takes its name from the humble spinning top—a simple object that becomes something captivating through craftsmanship, motion, and balance. That same philosophy guides the winemaking here: begin with thoughtfully grown grapes, elevate them through careful hands, and create wines meant to inspire conversation and connection. TOP specializes in Rhône varieties sourced from acclaimed vineyards throughout California, with a lineup centered on Syrah, Grenache, Mourvèdre, Graciano, Roussanne, and Grenache Blanc, plus the occasional unexpected variety that sparks curiosity. Eight wines are produced, primarily blends, and released twice each year in spring and fall. Production is limited, with most bottles allocated to club members, though a small selection is held back for visitors—making a tasting at TOP a special opportunity to slow down, find your balance, and enjoy the moment.
Stiekema Wine Company is the heartfelt vision of winemaker Mike Stiekema, whose unexpected journey into wine led him to study Viticulture and Enology before finding his home in Paso Robles in 2018. What began as a personal search for purpose has grown into a family legacy alongside his wife, Megan, and their two young daughters. Guided by balance, patience, and a deep respect for the land, Mike embraces sustainable and regenerative practices to create thoughtful wines that connect people with nature, place, and one another. Quench + Temper
Perched at 1,400 feet in the Santa Lucia Mountains, BÃS Vineyard is one of those rugged Paso sites that makes you wonder how vines grow there at all—and that’s exactly what makes it special. Planted in 2013 during the heart of California’s five-year drought, these organic, dry-farmed vines cling to steep, southeast-facing slopes that reach beyond 45 degrees. Beneath them lies siliceous shale and ancient marine sediment from the Monterey Formation, dramatically exposed by a nearby rock quarry cutting deep into the mountainside. The vineyard is densely planted at roughly 2,000 vines per acre and trained using the traditional Échalas method found in France’s Northern Rhône, encouraging each vine to produce less fruit with greater concentration and complexity. Just 20 miles from the Pacific, warm days and cool nights create dramatic temperature swings that help shape the vineyard’s resilient, expressive Graciano, Mourvèdre, Grenache, and Syrah.
Just three blocks south of Paso’s downtown square, Cypher Winery has transformed the historic 1880 train depot into one of the city’s most distinctive tasting destinations. Original wood floors, vintage windows, and plenty of old-fashioned character create a relaxed setting where guests can slow down and enjoy Cypher’s limited-production wines alongside SAM’s seasonally inspired culinary pairings.
